Andouille is a coarse-ground sausage that originated in France. In the United States, andouille is often associated with Louisiana Cajun-style cooking, and our blend definitely brings the heat! Andouille is great in gumbo, jambalaya, or savory stews. We offer packages for making 10 pounds or 25 pounds of sausage. Our own recipe, blended with salt, dextrose, garlic, cayenne, crushed red pepper, paprika, rice flour, paprika oleoresin, allspice, and capsicum oleoresin.
